Happy Cinco de Mayo! Mexican food is one of my husband’s favorites. Since I love my husband, and love cooking for him, I love cooking those dishes that I know he will really enjoy! If you enjoy Mexican food like he does, you will love this recipe! This dish makes 6 - 8 large gluten free enchiladas. There will be plenty for you and your whole family (and you may even have leftovers).
