Crab Stuffed Filet Mignon with Basil Cream Sauce

Filet Mignon and crab are two of my husband’s and my favorite foods to eat, and when you blend the two together, it is almost as good as sex! One of my favorite ways to express my love is through food, and I wanted to create something special for us this year. Special it was, as when we were finished with this incredible meal, my husband informed me that this is now his new favorite meal! Gluten Free Grilled BBQ Pork Ribs

Grilled BBQ ribs make a great summertime meal! There is nothing much better than the taste of a great dry BBQ rub that penetrates the ribs while marinating and cooking, blended with a sweet and savory sauce that gets grilled on. When all of those flavors unite with the smokey grill flavor, and then you sit down to eat, and have to constantly lick the sweet stickiness off your fingers while eating, it is heaven on a plate! 
Many seasoning blends that you buy in the store are not gluten free, but that does not stop me! Many of my recipes come about because I refuse to go without my favorite foods simply because I now have non-celiac gluten sensitivity. Just because you are gluten free, you do not have to miss out on any of your old favorites, and that is why I do what I do. I refuse to go without my favorites, and you do not have to either! This week’s recipe is Gluten Free Grilled BBQ Pork Ribs. 
Please note: 
Regarding the Gluten Free Dry Rub and the Homemade BBQ Sauce: Feel free to  increase or decrease the amount used, and add or subtract any spice to customize the flavors specifically for your final desired results. Also, you will notice that the BBQ sauce recipe is done in parts and measurements. The measurements are given for a large amount of sauce. I did it this way because sometimes I just want to make a small amount of sauce, and other times (especially during the summer when I am grilling out a lot), I make a large amount and keep the extra in the refrigerator. But I also want to remind you to not contaminate your sauce by dipping your brush into the sauce, and then spread that sauce onto the meat, and go back into your sauce to get more. Simply take out a small amount into a separate bowl, and use from that small bowl. If you need more, just pour out some more into your small bowl. Keep your remaining sauce in the refrigerator until you are ready to use it.
Ingredients:
A slab/cut of your favorite ribs
Gluten Free Dry Rub (see recipe)
Gluten Free Homemade BBQ Sauce (see recipe)

A wonderful gluten free appetizer for any occasion, Baby Bello Mushroom Pate. You can use gluten free crackers; however, I recommend using toast points made from Chef Vedam's Gluten Free White Bread.

Gluten Free Pomegranate Molasses Chicken

When I created this Gluten Free Pomegranate Molasses Chicken recipe, I had no idea exactly how good it would be; this meal was gluten free and EXCELLENT!
Nirish thought I had spent time outside at the grill, but nope; this was all done inside! It was sweet, savory, and the chicken was so juicy! I cannot tell you in words exactly how delicious this dish actually was; no descriptive words would even begin to describe how incredible this recipe actually turned out.

Happy Cinco de Mayo! Mexican food is one of my husband’s favorites. Since I love my husband, and love cooking for him, I love cooking those dishes that I know he will really enjoy! If you enjoy Mexican food like he does, you will love this recipe! This dish makes 6 - 8 large gluten free enchiladas. There will be plenty for you and your whole family (and you may even have leftovers). If you happen to be a small family, I would recommend cooking only half of it, and freezing the other half, to pull out to heat on one of those nights that you just don’t feel like cooking.You can find the complete recipe at ChefVedam.com.

Celebrating a Gluten Free Cinco de Mayo: Fish Taco Wraps


These Gluten Free Fish Taco wraps are simply DIVINE! They are also quick, simple, and nutritious. They can even be more healthy simply by roasting the spiced cod fillets instead of frying them. We have done both but sometimes we just can’t help ourselves and enjoy a good fried fish filet! Also, if you would rather substitute the lettuce wrap with a gluten free wrap, there are some great ones out there now!
