Grilled Scallops and Summertime Salad
Last weekend I wanted to create a special dinner for my family! I wanted to create something decadently delicious along with something light, fresh and seasonal, and of course, Gluten Free! I could literally taste it in my mind!
As I have said with other recipes, the desire for a specific type of dish literally sends a message to my taste buds; I can taste it before I even make it. As I am dissecting what I am tasting from my desires, I break what I am tasting down to specific ingredients. From there I begin to formulate that into a recipe, and that sends me on a journey to find what I need. I needed scallops and fresh vegetables, fruits and fresh herbs. Luckily, I had the fresh herbs taken care of, now I just needed scallops and a few other fresh ingredients that one little errand could take care of.
I cannot tell you exactly how delicious and simple this dish truly is. Yes, there are a lot of steps to it (very similar to making a large salad); however, absolutely nothing is difficult about this recipe. Try making this for your family, or make it for a special date night; it is absolutely delicious, satisfying, and they will think you have slaved all day, and will know you love them dearly!
