Gluten Free Portobello Mushroom Caprese

I recently posted Gluten Free Caprese Chicken & Zucchini which was a new take on the traditional Italian Caprese Salad, made it into a main dish.
This past weekend, Nirish and I were visiting some long time friends of ours who are vegetarian. As I was thinking about what I could make us for dinner, I thought about the Gluten Free Caprese Chicken & Zucchini, and a light bulb went off. Why not make this incredible dish, but make it vegetarian? I easily substituted portobello mushroom in place of the chicken breast.
We all loved it! The baked vegetables gave us plenty of juice to flavor the gluten free pasta, and the portobello mushroom gave us the protein we all needed. Top that with the melted mozzarella and parmesan cheese and you have an incredibly delicious meal. I accompanied it with Gluten Free Parmesan toast to help us sop up and get all that extra juice…

Gluten Free Fried Green Tomatoes


Fried green tomatoes have long been a southern tradition. I have eaten them and loved them my whole life; I can’t believe that I did not think about them when I created “Vedam’s Gluten Free & Fabulous! Recipes From A Southern Gay Househusband.”. They were such a summertime treat! I remember as a little boy watching the tomato plants begin to form tiny blooms that would each soon begin to form a little bud of a tomato. Within a few weeks, the vine would begin to fill up with sweet red deliciousness. After we began to get a few garden fresh vine-ripened tomatoes, we would also begin to pick a few green ones, and the summertime treat of fried green tomatoes would begin. My mom didn’t like the completely green tomatoes; she liked them just as they were beginning to turn red. She thought the completely green tomatoes were bitter, and I am the same way.
Like many things, once you begin a gluten free diet, getting something like fried green tomatoes is virtually impossible, unless you make them yourself. They are actually quite easy to do. I just recommend getting all of your ingredients and supplies together first, because once you begin, they fry up pretty quickly.
Besides your green tomatoes that are just beginning to turn red and gluten free ingredients, you will need 3 plates to dip your tomatoes to achieve the perfect batter. I also prefer to fry my tomatoes in a cast iron frying pan (as that is what my mom used), but I assume you can use any type of frying pan that you may have on hand.

Seasoned tomato slices
First you flour the tomato slices

Then dip the slices in buttermilk   

















Give the slices a final coating of flour, cornmeal, & seasonings
I prefer a cast iron skillet for frying tomatoes.

Gluten Free Popovers



Who says that gluten free bread can’t be light, fluffy, airy and delicious? These popovers are a cross between a croissant and a yeast roll! They are so incredibly delicious; they work great for a Sunday dinner or any meal for that matter, and also work great for breakfast with nothing other than butter and jam. Mom said that this was the best gluten free recipe that I have created!
These are so easy to make; all you need is a blender. The hardest part about these (which really isn’t hard at all) is to make sure that you preheat the oven completely and then time everything exactly as the directions specify.
Try these for yourself, and I PROMISE you - you too will be a believer that gluten free breads can be a TREAT!! This recipe makes 6 popovers and can be easily doubled.
