July of last year, I created “Gluten Free Stroganoff Lite”
because at that time, Mom was on a very restrictive diet. Now, some of
those restrictions have been lifted, and I have been craving those
flavors again (since I haven’t had anything like this since last
summer). This version takes the classic recipe and steps it up a bit
with Marsala wine, Dijon mustard and a little pat of butter for that
little extra bit of creaminess.
Yes, Stroganoff is typically served with
egg noodles or sometimes pasta, and if that is what you are wanting,
make sure you use or make your own gluten free pasta/noodles.
Tonight, I really didn’t feel like a pasta dish so, I decided to do
this on a bed of mashed potatoes. May I say, “DAMN, it was GREAT!” If
