Gluten Free Squash Casserole

A good casserole complements any good meal, and this blend of fresh squash, onions, cheddar cheese and a few other goodies makes for a GREAT casserole!

It’s not only a good casserole, it is a GREAT GLUTEN FREE Casserole!



Ingredients:

3 lbs. fresh Yellow Squash

1 large Onion

1 - 2 tbsp Olive Oil

3 - 4 tsp Salt (for seasoning squash and onions while cooking)

1 1/2 cups grated Sharp Cheddar Cheese

1/2 cup Mayonnaise

1 Egg (beaten)

2 tbsp Butter (melted)

1/4 tsp Salt

1/4 tsp Pepper

1/4 tsp Garlic Herb Spice Mixture

1/2 tsp Vedam’s Seasoning Blend

1 cup your favorite Gluten Free Crackers (crushed)



Directions:


Wash squash. Cut the ends off of squash, and then cut the squash into 1/4 - 1/2” medallions, and set aside.


Cut onions into small pieces.


Using a dutch oven or a large skillet, heat olive oil on medium high heat. Add squash and onions with salt. Cook for 15 - 20 minutes, stirring occasionally, until squash is tender.


Using a colander, drain all moisture from squash and onions. Place into a large mixing bowl. Using a fork, mash squash and onion into smaller pieces, and set aside.


Preheat oven to 350 degrees.


Using another mixing bowl, mix 3/4 cup of cheddar cheese, mayonnaise, egg, butter, salt, pepper, garlic herb mix, Vedam’s Seasoning Blend and 1/2 cup of gluten free crackers, and mix thoroughly.


Add cheddar cheese mixture to squash mixture.


Spray casserole dish with non-stick spray, and add squash mixture to casserole dish.


Top with remaining cheddar cheese and gluten free crackers. Cook for 25 - 35 minutes until cheese is melted, and top is golden brown.

Gluten Free Sweet Potato Sugar Cookies





Ingredients:

2 large Sweet Potatoes

1 cup Sugar

1 stick Butter (melted or softened)

1 tbsp Milk

1 1/2 tsp Vanilla

1 Egg

1 tbsp Molasses

1 cup Gluten Free All Purpose Flour Blend

1 1/2 cup Almond Flour

1/4 tsp Salt

1/2 tsp Xanthan Gum

1/2 tsp Baking Powder

1/2 tsp Cinnamon

1/2 tsp Nutmeg

1/2 tsp Ginger



Directions:


Preheat oven to 400 degrees.


Wash sweet potatoes, and poke several times with a fork. Place sweet potatoes on a cookie sheet, and place into preheated oven for 1 hour to 90 minutes depending upon size, until potatoes are done and tender to the touch. Remove from oven, and allow potatoes to cool enough to touch. Once cool, remove skins from potatoes and discard skins.


Reduce temperature of oven to 375 degrees.


In a large bowl, cream sugar and butter using a hand mixer. Add milk, vanilla, egg and molasses and cream again.


In a medium size bowl, mix Gluten Free All Purpose Flour Blend, almond flour, salt, xanthan gum, baking powder, cinnamon, nutmeg and ginger.


Blend flour mixture into creamed mixture.


Spray cookie sheet with non-stick spray. Using a small scoop, scoop dough onto cookie sheet about 2 inches apart.


Bake for 20 minutes. Allow to cool a few minutes before removing from cookie sheet, and ENJOY!

Gluten-Free Cream of Mushroom Soup and Gluten Free French Fried OnionsGreen Bean Casserole is one of the all time holiday favorite casseroles. For someone that is gluten intolerant, the problem with this casserole occurs first in the Cream of Mushroom Soup. Finding one that is gluten free can be quite difficult. The second problems occurs with the crunchy topping of French Fried Onions as they are fried with a gluten filled crust! So, how do you get around this issue? You have to make both from scratch. But don’t worry, you can make the Gluten Free French Fried Onions and the Cream of Mushroom soup weeks in advance and freeze them. Just pull them out of the freezer in plenty time to thaw, and then the Green Bean Casserole is simple to put together!


1/2 stick of melted butter

1 Egg

1 quart canned, or 1 large can, or 4 cups of Blanched Fresh Green Beans

2 cups of Gluten-Free Cream of Mushroom Soup

1 tsp Salt

1 tsp Pepper

1 tsp Garlic Mix

1 tsp Mrs. Dash Original Blend

1 tbsp Pine Nuts (optional, but I love the extra crunch and flavor it gives)

3/4 cup Gluten-Free French Fried Onions

More Gluten-Free French Fried Onions for topping
 
 


Directions:

1) In large mixing bowl, mix all ingredients, except the onions that are reserved for topping.

2) Spray medium to large baking dish with non-stick spray. Put mixture into baking dish, and bake in 350 degree preheated oven for 20 minutes. Top with more Gluten-Free French Fried Onions, and bake for another 10 - 15 minutes.

Gluten Free French Fried Onions

Gluten Free French Fried Onions
 

 



Ingredients:

Vegetable oil for frying

2 - 3 large onions, about 3 cups sliced

1 1/2 cups milk or buttermilk

1 cup Gluten Free All Purpose Flour Blend

1 teaspoon salt

1 teaspoon pepper

1 teaspoon garlic-herb mix

1 teaspoon paprika



Directions:

1) Slice the ends off of the onions. Remove outside skin. Slice onions thin. Separate rings. Place onions and milk in medium bowl; let stand at least 15 minutes.

2) Prepare dutch oven or deep fryer for frying. If using dutch oven, heat at least 2 inches of oil to 375°F. If using deep fryer, follow manufacturers directions, heating oil to 375°F.

3) In resealable plastic food storage bag, mix Gluten-Free Flour mix, salt, pepper, garlic-herb mix, and paprika until well blended. Using a strainer, drain onions from milk. In small handfuls, place onions in bag; shake to coat. Remove onions from bag shaking off excess. Gently place no more than half of onions in oil; fry 2 - 4 minutes or until golden brown. Drain on paper towels. Repeat with remaining onions.

French fried onions can be made days or weeks in advance and frozen. Let french fried onions drain, and cool completely. Wrap loosely in parchment paper, and place in large zip-lock freezer bag.

No telling how many biscuits are made and consumed each day in the United States. In the South, biscuits are a staple, being served at breakfast, lunch and dinner. When I was told that I had to eat gluten free, I knew that I would have to make a perfect gluten free biscuit, and these gluten free cheddar cheese biscuits are great any time of the day!

Gluten Free Top Sirloin Rib Roast with Red Wine Au Jus & Homemade Horseradish Sauce

This past Thanksgiving I wanted to create something special for our family, and I decided to do a Gluten Free Top Sirloin Rib Roast. Even though this prime piece of beef is not as pricey as a rib roast, this is quite a nice cut of beef!
This is not be like many recipes that tell you cook it at 350 degrees for “X” amount of time per pound; however, if you trust me on this one, you too can cook the perfect piece of beef for you and your family! Choose between 1/2 - 1 lb. of beef per person. You will notice that the amount of spices is not listed; however, I suggest to LIBERALLY SPICE all sides of your selected cut of beef. You will notice that I start the roast 2 - 4 days ahead. You do not have to start it this far in advance if you are crunched for time; however, the earlier you begin this process, the better it will be!
I highly recommend purchasing an oven safe thermometer (one that will alert you without having to keep opening your oven door). This is allow you to just let your beef be, and alert you when it is done.

Gluten Free Scalloped Potatoes
 
 
 
Ingredients:
1 large Onion (chopped)
1 stick Butter
Dash of Salt
6 tbsp Gluten-Free All Purpose Flour Blend
2 cups Heavy Cream
1/2 - 1 cup Milk
1 cup grated Cheddar Cheese
1 cup grated Fontina Cheese
1 cup grated Gruyere Cheese
1 tsp Salt
1 tsp Pepper
1 tsp Mrs Dash Original
1 tsp Garlic Herb Spice Mixture
9 - 10 Potatoes (peeled and sliced into 1/4” slices)
Directions:
1) Preheat oven to 350 degrees. Spray 9 x 11 baking dish with non-stick spray.
2) In medium sauce pan, melt butter. Add chopped onions and a dash of salt. Cook for 5 - 10 minutes until onions are translucent. Add flour mixture, and cook for 5 - 8 more minutes. Slowly whisk in heavy cream and milk and stir to incorporate completely. Reserving a small amount of each cheese to use for topping, add grated cheeses, salt, pepper, Mrs. Dash, and Garlic and Herb mixture to sauce pan, and continue to cook until cheese is completely melted.
3) Just like you are layering a lasagna, place enough cheese mixture in bottom of baking dish to lightly cover the bottom of dish. Place a single layer of potatoes onto cheese mixture. Sprinkle with Salt and Pepper. Continue to alternate layers of cheese mixture and potatoes, ending with cheese mixture. 
4) Top with remaining cheeses, and bake for 35 - 45 minutes until lightly golden brown on top.
